3 Ingredient Muffins

It’s fall, and I needed to share these amazing easy muffins with you. I know we don’t have a lot of time to spend in the kitchen, but maybe you want to make some muffins for a treat, for yourself, the kids, or to take to friends. These muffins have only 3 ingredients and come together in minutes.  Three, yes, three ingredient muffins!

I have two recipes I’m sharing with you today. Apple Cinnamon and Pumpkin Chocolate Chip muffins. It takes longer to say the recipe then to make it!


The generic recipe is-

1 boxed cake mix

2 cups of smooth puree

baking chips

That’s it. Those three ingredients are all it takes to get about 2 dozen amazing moist muffins.


For the apple spice muffins

You need-

1 box spice cake mix

2 cups applesauce

2 cup cinnamon chips.

In a mixing bowl, blend the cake mix and the applesauce together. Add the cinnamon chips to the batter and lightly mix in.

Use a scoop and place the batter into a baking cups in a cupcake baking tin.

Bake at 350 degrees for about 12-15 minutes. Makes about 2 dozen.

(note- you do see crystal sugar, I like to top my muffins with it to give a crunch- you don’t have to have it- that’s my family preference)


Easy, fast and delicious. Hey, you can eliminate the chips and just have the muffins plain, still yummy!!


So moist and so delicious!


I love the cinnamon chips, they have a punch of cinnamon flavor!


Want those pumpkin chip muffins?

1 box of yellow cake mix

1 can of pumpkin puree ( about 2 cups)

2 cups chocolate chips

( again, I have added the crystal sugar to these muffins)



In a mixing bowl, combine the cake mix with the pureed pumpkin, mix to combine. Then fold in chocolate chips.

Scoop into baking cups in a muffin tin.

Bake at 350 about 10-12 minutes. Makes about 2 dozen.


I also like to add some chocolate chips to the top of the batter for extra pretty tops.


Yum, pumpkin and chocolate. These were my family’s favorite muffins!
