Appetizer – Bacon Wrapped Chicken Bites
Appetizers can be hard to figure out.
Do you go the easy route? Maybe the tried-and-true Buffalo Wings? Dip and Chips? Or, something else?
There’s no need to buy those pre-made frozen appetizers, or store bought at all!
These bacon wrapped chicken bites are quick to make, and you can brag about how you made them, handmade and all.
I have two versions of this recipe.
There is one that is regular and one that is low-carb friendly.
Honestly, I couldn’t tell a taste difference between the two, and I’d be hard pressed to figure out which ones were which on the tray once they baked up.
So, you could take these and whisper to your low-carb or diabetic friends that they can eat these, and no one else will be the wiser!
Low carb version:
Take 2 Tablespoons of coconut sugar – I have found this in the sweetener aisle at the grocery store. And 2 Tablespoons of chili powder.
Mix them in a bowl.
2 Tablespoons of chili powder mixed with 2 Tablespoons of brown sugar. (You can add in a 1/3 Tablespoon of sugar if you like yours sweeter.)
Cut the chicken breasts into bite-sized pieces.
Cut your pound of bacon into thirds. I take the whole block and cut it apart with scissors in the wrap, so it’s easier.
Wrap one piece of the bacon around the piece of chicken breast, secure with a tooth pick.
Place on a rack on a sheet pan.
Dip the bacon chicken bite into the coconut sugar/chili powder mix, and cover the bite completely.
Place back on the baking rack.
Place the bacon chicken bite into the brown sugar/chili powder mix and coat all sides. Place back on rack.
For either recipe bake at 425 degrees until the bacon is crispy and the chicken is done.
Ready. Set. Eat!!!
