Balsamic Italian Pasta Salad
Looking for a quick, easy summer salad? Something without mayo so it can go along easily with picnics and family gatherings? This yummy balsamic Italian pasta salad is chock full of veggies and goodies, and easily personalized.
Don’t like an ingredient? just leave it out. Want to go meatless, don’t add the pepperoni, want to omit the cheese, that’s fine too. It’ll still be delish!
- pepperoni about 1/2 cup
- 1 box of tri color spiral pasta
- 1 bottle of balsamic vinegrette
- 1/2 cup each carrots, broccoli, english cucumber
- 1 cup each, your favorite cheese ( I used colby jack and mozarella) spice it up with some Jalepeno Jack.
Chop up stick pepperoni- I found these little rounds because my store didn’t have anything smaller then an 18 inch pepperoni. You can use that, or the rounds. I prefer the chunks but bought these rounds because I just don’t have that much I could do with a huge pepperoni stick- I guess I could play fetch with the dog ( one time) or battle the minions in an epic battle for Middle Earth. or freeze it.
Gently place them in your bowl, or if you are me. just dump them in. make sure you do not add that little freshness pack that comes in pepperoni packs. probably wouldn’t taste that good. and you’d probably get a good teasing from your family. not that that would ever happen to me. ever.
Now, make like a chefy chef and dice your carrots into small pieces.
Next, you are going to chop your broccoli ( and cauliflower if you have some) but you are going to pretty much chop it into the smallest bits you can get. This is where you sneak in your extra vegs. that’s going to mix in and be almost invisible. Believe me, I have two kids and a hubby who fight ingestion of veggies. they didn’t really notice .
Next. add your cukes. I love English Cukes, they are so much less seedy and crunchier then regular cucumbers. Chop these in a dice as well.
Cube your cheese if you are adding it, into about the same size as your veggies.
Boil and drain your pasta. Let it cool. Add it on top once the noodles are cool.
Now add your bottled or homemade balsamic vinaigrette.
Stir stir stir stir…
