Banana Bread with Cream Cheese Ribbon
I never had banana bread in my life, until I baked it myself.
I have only had it a handful of times. It’s always super moist and flavorful.
I think it might be fool proof, as long as you make sure you bake it correctly.
I think it’s a wonderful dessert bread, perfect on it’s own, even better slathered in butter.
We often eat it here as a breakfast or after school snack.
I have almost always made it with some sort of chocolate addition.
I mean, it’s chocolate right? But what about trying other versions too?
We went to the Amish Farmers market a couple weeks ago and I saw this bread with cream cheese in the center.
I could not get it out of my head.
So, I set out to attempt my own version (Banana Bread with Cream Cheese Ribbon) to see how lovely it would be.
I sliced it and tentatively took a bite, it was like banana cheesecake, oh my heavenly deliciousness!
The only change I would make is to add nuts. We have nut sensitivities here in our house, so I make most everything nut free anymore.
However, if you like some in your baked goods, I would recommend adding some walnuts or pecans to this bread.
For the Bread:
1 cup brown sugar
1/2 cup white sugar
1/2 cup canola oil
2 1/2 tablespoons vanilla
6 medium well ripened bananas or 3 large ones- mashed well
1/2 cup sour cream or Greek yogurt
2 cups of all purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Mash the bananas. I threw them in my mixer and just used the paddle to mash them well.
I removed them from the mixing bowl and added them in to a large bowl.
I then added the eggs, oil and sour cream, mixed those in with a whisk, added the vanilla, and the sugars, and mixed those in.
I then mixed in the salt, baking soda, and baking powder and then finished by adding in the flour (and nuts if you desire).
In the mixing bowl, since it already had had the mashed bananas, I creamed the cream cheese mixture.
Cream Cheese Ribbon:
1 8-oz. block of cream cheese
1/2 cup white sugar
1 teaspoon vanilla
1/3 cup all purpose flour
Cream the cream cheese and sugar together. Add in the egg and vanilla, mix well then add in the flour.
Since this makes two loaves of bread. I sprayed the pans well with cooking spray, then added in about 3/4 of the batter equally to them. I then added the cream cheese mixture to the tops, equally between both loaves, then topped them with the remaining batter. Bake at 350 degrees F. about 50-55 minutes. Insert a toothpick or skewer in center of bread, bread is done when toothpick comes out with only crumbs and not a gooey layer.
Cool on wire rack, removing from pans after the pans are cool to the touch.
