Buffalo Chicken Chili fast fix

As a working mom, I often am trying to get a good meal on the table at dinner time. I will not compromise our family dinners, it is one of my traditions that I feel is necessary to keep our close knit bond. We all enjoy sharing our days, and most dinner are accompanied by lots of laughter and fun stories. It really does help us parents to check in with the girls and lets them know that we think that their day was important. We solve problems, give advice and just have a lot of fun while we nourish our bodies and our relationships with each other.
There is just something about fall that calls me to make chili and belly warming food, bonus is having a little mouth heat to spice up our meal! This filling and rich chili is filled with veggies and chunks of chicken, and perfect for those cool fall evenings when you just want a warm meal to satisfy you.
And while I’m working at home, I don’t always remember to pull out something for dinner. So here is Walmart to the rescue. I do like to shop there, and find a lot of good bargains, and although I have heard stories, most often I meet super nice people and find everything I need there. I am blessed to have several great Super Walmart stores within about 15 miles of me. I love that I can pick up fixings for dinner in one trip.
It’s so easy, a few fresh ingredients chopped, a couple cans of yummy ingredients, and a rotisserie chicken, and we’re about 15 minutes from dinner on the table.
Honestly, RO*TEL and Hunt’s Tomato Sauce are a staple in my house. I use the RO*TEL in taco meat, chili, and spaghetti sauces. Hunt’s Tomato Sauce never tastes like the can and I use it as well in homemade spaghetti sauce, taco meat and any tomato based sauce.
I picked up a couple cans of each, cause I like to have extra in case I need it, or just because I don’t want to run low. Did you know RO*TEL has ORIGINAL, MILD, and HOT flavors. I am adding hot sauce to my chili, but the spice of the HOT flavor is great in taco meat or anything you want a little extra kick of heat in. Also, just in case you didn’t know, and didn’t pay attention and grab the HOT, when you need the MILD! eep! My kids will be waggling the tongues and waving their hands from the spice!
I also ran to the produce aisle to grab celery and an onion. I had some green pepper already diced and frozen in baggies in my freezer at home.
Perfect for me too, since the produce aisle is right across from the deli and I grabbed my chicken there too. Don’t you just love rotisserie chicken, it smells divine!!
1 small onion
3 stalks of celery
1/4 cup chopped green pepper
2 tablespoons olive oil.
Begin by adding the olive oil to a large pot. Dice the onion, celery, and green pepper, and saute in your pot until crisp tender.
While you are waiting for the veggies to get tender, pick your chicken and lightly chop it.
I love a recipe that lets you open a couple cans and toss in!
Add your can of RO*TEL into the veggies. Isn’t that pretty with all the reds and greens!
Then add your can of Hunt’s Tomato Sauce, 1 cup of chicken broth, and 1 cup of Hot Wing Sauce.
Add your chopped chicken to the pot, remove from heat then add 1/2 block of 8oz cream cream to the mixture. Stir the cream cheese into the pot.
When the cream cheese is all melted in, serve.
WAHLA! in about 15 minutes you have dinner done, and on the table.
I like the celery that comes with hot wings a lot, so I served mine with additional celery and a drizzle of Blue Cheese Dressing on my chili because although I like the spice, I’m a little wimpy and can’t take too much of it . Top with just blue cheese as an option. Sprinkle with a little parsley too!
- 1 small onion chopped
- 3 stalks celery chopped
- 1/4 cup green peppers chopped
- 2 tablespoons olive oil
- 1 rotisserie chicken
- 1 can RO*TEL
- 1 can Hunt’s Tomato Sauce
- 1 cup chicken broth
- 1 cup hot wing sauce
- 4oz cream cheese
- parsley/blue cheese/blue cheese dressing- optional
- Saute the celery, onion and green peppers in olive oil in a large pot. Add RO*TEL, Hunt’s, chicken broth and hot wing sauce. Pick chicken and chop, then add to pot, take pot off of heat, add in cream cheese, stir until cheese is melted into broth. Serves about 8.
