Christmas Cookies – Mini Chip Toffee Cookies
I love love love toffee.
I usually make English Toffee Bars, sometimes 3 or 4 batches because they are so yummy. Everyone wants more.
This year, I wanted to make a cookie with toffee.
So I found an easy chocolate chip recipe, and altered it to add the toffee.
But I changed up the chip size so that the chocolate wouldn’t over-power the toffee chips in the cookie.
I have to tell you something about this recipe and myself.
I like to eat cookie dough. I know some people do, and some have issues with raw eggs. I always use the freshest eggs I can get, check the package and make sure no broken egg has leaked onto my eggs – so that no leaching through the shell occurs. (That’s something I found learned about in professional baking.)
And, I’ve not ever once gotten sick from raw dough. I pretty much prefer it more than baked cookies.
And, although I love chocolate chip cookie dough, the chips just get in the way of the soft buttery dough.
And, if you are like me, and really really like cookie dough.
DO NOT TASTE THIS DOUGH!!
I am warning you! You will find out how amazingly delicious this dough is and begin to shovel it into your mouth!
Seriously, I had a hard time stopping myself.
Mini Chip Toffee Cookies
1 cup butter
1 cup brown sugar
1/2 cup sugar
2 tsp vanilla
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
3 cups flour
1 bag toffee chips
1 bag mini chocolate chips
Cream butter and sugars together, then add eggs and vanilla. Add baking soda, salt, and baking powder then add flour. Once flour is mixed in, add chips and toffee bits.
Bake at 350 degrees for about 8-10 minutes. You could add pecans to this as well. This recipe makes about 48 cookies.
pop this into the fridge for an hour otherwise it’s super sticky.
Then roll it out into balls, mine were large marble size. And freeze.
Bake at 350 degrees until done. About 8-10 minutes.
