Cream Cheese Swirled Applesauce Muffins
I came up with the idea for these muffins when I made my Banana Cream Cheese bread.
I thought I’d never heard of applesauce bread, and that was pretty unusual. We eat it for snacks and in lunches, and it’s a staple in our house.
I wanted to replace that Banana, or Pumpkin in a recipe and make the most moist bread with an amazing flavor.
I worried that the cinnamon would have to be strong, but not overwhelming, and I think I finally got it right.
These cream cheese swirled applesauce muffins are moist, with a cheesecake taste that compliments the cinnamon bread flavor.
It’s delicate, it’s light and it’s oh so good.
I can pretty much tell you that cheesecake is one of my most favorite flavors. So good. I’d add it to pretty much any breakfast item or dessert item.
These muffins make about 18 regular sized muffins.
I made two trays of them, one regular sized muffins and a whole two dozen tray of mini muffins. I actually had to swat the family away from them, and it was a mistake to bring them to the table as an ‘after’ dinner treat. They were eaten before dinner ended! LOL!
Oh well, I truly love it when my baking and cooking is such a big hit.
For the bread:
1/2 cup brown sugar
1 tsp vanilla
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tablespoon cinnamon
1/4 cup canola oil
3/4 cup applesauce
1-1/2 cups of flour
In a bowl, combine all the sugar, eggs, applesauce and mix well. Then add seasonings, and oil, then add the flour and leavening. Mix well.
In a cooking sprayed muffin tin, add batter to wells about 1/2 way full.
In a mixer, combine
1 8oz. package of cream cheese
1 tsp vanilla
1/2 cup white sugar
3 Tbsp. flour
Mix the sugar and cream cheese, then add in the rest of ingredients. Mix well.
In the wells of muffin tins half full of muffin batter, add a dollop of the cream cheese mixture.
Bake in a 350 degree F oven for 8 minutes for mini muffins. Bake 10-12 minutes for regular muffins.
Cool and serve.
I love these little bites, just pop one in your mouth for a treat!
