Easy Crock Pot Pork Carnitas
Happy Cinco de Mayo! I hope you have your margaritas, salsa and chips out today! How about something special for dinner tonight?
I love the slow cooker for being able to render the fat and flavor out of meats.
I wanted to try creating some spicy flavored pork that made delicious tacos, so I came up with these crock pot pork carnitas.
I love the crispy pork after I cook it under the broiler for a few minutes to get a little color on the meat.
So good! I adore spicy and saucy pork. I paired it with a coleslaw mix with extra veggies and cilantro then added a little sour cream and cheese to get a creamy texture with the soft corn taco. Yum yum!
First things first. Go ahead and get your crock pot out. I cooked mine on high for about 4-5 hours. I then let it set on warm until about 20 minutes before dinner.
I used a pork shoulder. I think mine was about 3-4 pounds. I took the netting off and coarsely cut it into about 3-inch pieces.
I added the spices then added a sliced red onion.
Spices: 1/4 cup orange juice
1/2 can of chipotle sauce.
2 Tbsp. cumin
2 Tbsp. chopped garlic
1 Tbsp. steak seasoning
1 Tbsp. oregano
Mix all of those ingredients well in the crock pot, and allow the meat to cook low and slow.
Once the meat is done, I took it out of the crock and chopped it up. I removed any large pieces of left over fat.
I put it on a sheet pan, then added a good cup of the broth to the meat.
Put your oven on broil and broil the meat until you get these delightful little crispy bits all over it.
Now it’s ready. Put it on some of your favorite taco shells or tortillas. Add a little of the cabbage or coleslaw mix (I like the extra veggies) and consume!
