Special Holiday Creme de Menthe Mini Cupcakes
When it’s holiday time, there is always a need to bring along a quick and delicious goodie for any of the multitude of gatherings. These little delectable creme de menthe mini cupcakes are pretty and easy, a really nice little treat with a light minty flavor.
When making these, I used a store bought cake mix. Just follow the directions and the key to making good cake is not to over bake them, you can also add in an extra egg or add sour cream to the water measurement. I tinted the dough with green gel coloring, totally optional, but they color to a pretty green.
For the mint flavoring, I added in Andes Candies baking bits. You can use the baking chips as I did, or chop up your own candies. I added about 1/2 cup to the batter. Then baked them off in green paper liners.
For the dark chocolate icing, mix in 1 stick of softened butter with 2/3 cup dark chocolate cocoa powder. Beat well in the mixer so there are no lumps. Add in 2 cups of confectioners sugar, then beat again. If icing is dry, add in a teaspoon of hot water until icing is smooth. Use a star tip in a pastry bag to add to the top of the cupcakes.
While the icing is still sticky, add a green Sixlet decoration( found at the craft store) and sprinkle the candy bits on top of the cupcake.
Serve and enjoy! These little bits are light on mint, but big on flavor. And they will be a hit at your next gathering!
