Holy YUMMY Guacamole!!
I almost didn’t share this with you, because it’s so simply simple. So easy to make. BUT it’s also yummy delish and it’s not really the USUAL guacamole that you might get or make. I did not grow up eating mexican/texmex food, it was something I discovered in my teen years and it’s become a real favorite. However, I always disliked guacamole, and never wanted to try avocados after eating some not good guacamole I had gotten at a restaurant.
But eventually I tried some at a restaurant (Don Pablos), and really really enjoyed it. When I got home, I tried creating it on my own, didn’t succeed and even though I asked friends for their recipes, I couldn’t recreate it. But something changed. I can’t remember what. Perhaps I was trying a new recipe and I was out of the ingredients, or maybe I said, well those same things are in salsa. But when I made this recipe for the first time, I knew it was a keeper. Sure, it might be different, and it’s not as healthy as guacamole made with a pica de gallo, but it got me trying something new to me and my minions now loving.. this guacamole.
You’ll need a couple ripe avocados, salsa ( any heat you like), lemon juice ( keeps the avocados from turning brown like apples do) and sour cream.
Cut your avocados open, take out the pit, and scoop them into a bowl. Add a good tablespoon of lemon juice and mash them with a fork.
Add about 1/4 cup each of salsa and sour cream. You can substitute lower fat variations and it tastes just fine.
Mix it all together. You don’t want to add more salsa then avocados because the red and green will definitely turn brown on you. little secret* if you are taking this somewhere – you can add a touch of yellow and green food coloring to make it pretty for longer. *
But we like it au natural. that’s how we roll..
Scoop with tortillas, spread on a sammie, dip with some carrots, however you like to eat it.
