Hot Roast Beast with Au Jus
Oh yes, I did call it Beast, cause this recipe is easy and is absolutely delicious. I make this recipe in the winter, it’s one of those feel good recipes that warms your belly. Add soft bread, dip in the beefy juices and top it with cheese, oh yeah, Hot Roast Beast – a dish that our family loves.
It’s really quite an easy main course to make. I use an eye round. not a lot of fat in the meat. So it could use some additional juices to make it succulent.
My eye round is about 4.5 pounds. Stick it into your Crockpot, I had to bed it a little to fit it.
Add a bit of water to the bottom of the pan. I used a cup at first.
Top your beef with 3 tablespoons Italian seasoning.
Now add a heaping tablespoon of chopped garlic.
And two tablespoons of beef base.
Add the rest of your water over top, I added about 2 cups in total.
Let this cook on low for 4 hours.
Pull it out and let it set for 15 minutes so the juices stay in. It’s ready to eat at this point. BUT if you like your meat more well done. My hubby won’t eat it this pink. Stay tuned!!
I use an electric knife to slice the beef thinly.
Now everybody jump back in the pool!
Put the sliced meat back in the au jus. that stuff is golden. it’s soo yummy. Keep your crock pot on, then pull out the slices when you are ready to eat. Great to take to pot luck dinners because it stays hot for a long time.
Plate UP! Notice I added some juices to the roll, messy, but awesome! I love cheese and provolone goes well with this!
