Mini Pepperoni Pizza Dip

I love love love pizza, but I have to be honest. I am trying to be low carb and simply cannot eat the crust. Sure, there are low carb crust substitutes out there. Ah, I’ve tried some. I don’t care for the omelet/veggie taste as much as good old bready crust. So I came up with this Mini Pepperoni Pizza Dip.

And what I love is that this dip is edible with or without dippers. Dippers are chips or pretzels or anything you might use to scoop that amazing dip up and transport it into your open piehole. LOL!

I have used some pasta chips for these dippers, they remind me of the flavor of pita chips. The marinara seasoned ones were outstanding, however, if you truly want low carb, serve some celery or carrot sticks alongside the chips so that us Low Carbers can enjoy, unless we just scoop some on a plate and enjoy as is.

I also used mini pepperoni’s in this dip, reason being, I mean, yes, a good regular slice of pepperoni is great, but honestly, those big rounds will be long gone before the dip is. How many can you fit on a plate? 8-10? With these little adorable pepperoni’s there are plenty to go round. And you should be able to scoop them up nicely too, with whatever dipper you have put on the side.

I have used a pie plate to serve this out of so that the dip ratio is thinner and you will get a larger surface to scoop melted cheese and pepperonis.

Let’s get to making this wonderful dip.

You’ll need a few ingredients to make this.

1 can of Pizza Sauce

1 tablespoon oregano

1 tablespoon italian seasoning

1/2 block mozzarella cheese ( optional)

2 cups mozzarella cheese, divided ( reserve 1/2 cup aside)

1 block- 8 oz cream cheese

1 package mini pepperoni

1/4 cup parmesan cheese

1/2 tablespoon fresh parsley chopped

 

In a bowl, melt the cream cheese in the microwave until it is soft.

Add about 1/2 cup mini pepperonis, 1 1/2 cups mozzarella cheese, 1/4 cup parmesan cheese, both tablespoons of oregano and italian seasoning.

Next add about 1/2 the can of pizza sauce.

Mix well, until combined.

Spray a pie plate with cooking spray, then add the cream cheese mixture to the plate and smooth out.

Add a couple of large spoonfuls of the pizza sauce to the top of the cream cheese mixture.

This is a totally optional step…. you would only do this if you are obsessed with cheese like I am, and want a thick layer of cheese all over your dip.

It would be perfectly fine to leave this mozzarella block cheese out of the dip. However- if you chose to, slice the dip into thin slices and layer on top of the pizza sauce.

Next sprinkle about 1/2 cup of shredded mozzarella on the dip.

Sprinkle with a little more oregano.

Then add the pepperoni’s all over the top.

Bake in a 400 degree oven about 15-20 minutes, until the cheese is melted and lightly browned. Sprinkle with a little fresh parsley.DSC_0061
