PB & J Bites


Snacks. I swear they make up more then half my kids diet.  After school, in between meals, and let’s face it, as just a meal, they love them.  I am always challenging them to try something different, and not always eat the same thing over and over again. My youngest daughter absolutely loves Rhodes breads and Cinnamon Rolls. She would eat them every day if I allowed her to, so when we are talking about after school snacks, anything or any idea I might come up with is always given a thumbs up if it includes Rhodes Frozen Dough. My other daughter loves to get stuck in a rut with food, she will just enjoy eating one kind of snack or food for weeks if she can, lately it’s been peanut butter and jelly. Add this thinking to one idea and I came up with Peanut Butter & Jelly Cinnamon Bites.  A snack I could easily whip up after school that was quick, has protein and a little sweet. Once the rolls are baked, you can whip up the peanut butter and icing together and store that in the fridge, to create individual servings instead of one large one. I loved the idea of serving it like Nachos, and using your hands to grab out the cinnamon buns bites covered in the gooey peanut butter and jelly. And FEAR NOT, if your kids can’t eat Peanut Butter, this recipe could be altered using Almond Butter or even Cookie Butter instead!
