Pulled Chicken Sliders


As a busy family, I love a meal I can throw in the Crockpot and leave for a few hours to come home to a cooked meal. It’s my favorite! I have been making Pulled Pork for many years, but recently my daughter suggested trying the recipe with chicken, and would you know, it was fantastic. It’s become a regular in our meal rotation and I often make it on the weekends. There is just something about it that reminds me of summer time and the warm days even when it’s cold and snowing out. Cook this recipe in a couple hours, and let the coleslaw sit in the fridge and marinate as well. You will have a fantastic slider that can be eaten as a meal, or taken along to serve with friends or as a fun party food. They serve up well with a little pickle on top.

While they look a little messy, it’s a delicious kind of messy and still make a great snack. I under proof my Rhodes Dinner Rolls a bit so that the inside is a little denser to hold up to the saucy chicken and slaw. The chicken is tender while the sauce of it is smoky and flavorful, the slaw is perfectly crispy and crunchy, with a sweet undertone. So yum!
