Quick and Done Chicken for Dinner

As a working mom with busy kids, I try to cook as much as I can at home.

Fresh foods and good quality just always wins at my table.

I wanted to share this basic quick and done chicken for dinner that you can dress up a dozen different ways, and make blah chicken stand out again.

You need some chicken breasts…

…and a little mayo, seasoning, bread crumbs and Parmesan cheese.

Take your chicken breast, and coat it with mayo. You could also use mustard, sour cream or softened butter.

I use a brush to keep my coating of mayo thin.

Sprinkle with seasoning. You can try something like Ranch or Italian dressing mix, adobo seasoning, or any chicken flavoring you like.

Mix 1/4 cup bread crumbs (I love panko) and 1/4 cup of Parmesan cheese together and sprinkle the mixture over the chicken.

You can use all bread crumbs instead of the cheese/crumb mix.

Bake at 400 degrees for about 20 minutes until brown and lovely on top and done in the middle.

If your crowd is less hungry, you could also split the breast butterfly style and coat each breast half for more crunchy goodness.

Add a garden salad and some veggies and dinner is done!
