Salted Caramel Apple Squares

As a working mom, I can tell you , I understand how busy it is when we leave the office and go to our mom job at home. There is nothing more that I want, then to share ideas with my friends how to make more of our family time during the holidays. The holidays get so hectic, shopping, parties and more until well…we are exhausted. I want to share one of our holiday traditions, that we have once a week ( or try to) during the Holiday Season.
My girls are teens now, and both growing up so fast. I want to still share the magic of the holidays with them. So we try to have a family movie night some time during a weeknight, to sit down and watch a family movie. What is nice is that our Christmas favorites are short shows- Santa Claus is Coming to Town, Rudolph, Frosty etc.. We even have them on DVD’s to watch if we can’t find them on TV. Then my busy teens are off to their rooms to complete home work or study, but we’ve made a point during the week ( when we can) to gather together and spend a little time with each other.
Yes, even though the girls are teens, they still love the old Rankin and Bass movies. After dinner we snuggle up on the couch, under a favorite blanket, have a little hot cocoa and maybe a treat. This easy cookie bar idea is fast but tastes so gourmet. It’s definitely a treat! Get the kids to help and you can put them in while you are eating dinner, they will be ready to eat for dessert. Make some of these delicious Salted Caramel Apple Squares tonight! They come together in a breeze and take less then 10 minutes to get them ready for the oven.
I cut these layered bars into small 1.5 inch squares then iced them so I didn’t mess them up putting them in the tray. I can’t wait to share these delectable little morsels with you.
If you look closely, you can see the caramel just in the middle, sandwiched between the two layers of cookie. YUM!
While at Walmart on Saturday I grabbed a couple packages of these break apart cookie dough. I love the holiday flavors. They were in a floor bin with lots of other cookies. I think these are a favorite, because they were almost sold out! Check these ingredients out- apple pieces, apple filling, cinnamon, mmmmm yum!
2 packages of Nestle®TOLL HOUSE® Harvest Apple Refrigerated Cookie Dough
1 10oz. package salted caramels
2 tablespoons heavy cream
1/4 cup canned cream cheese icing
In a sprayed 8×8 pan, break apart one package of the cookies into rows. Spread them out on the pan.
Use your fingers ( this is where the kids come in handy to push and spread the dough to fill the whole pan.
In a sauce pan, unwrap your caramels, and add heavy cream.
Melt caramels and cream on low until creamy. ( you can add sea salt at this point if your caramels are unsalted).
Remove the pan from heat, then spoon over top of Harvest Apple cookie dough in pan.
Open second cookie dough package, then take cookies and smoosh with your hands then place on top of caramel layer.
Completely cover the caramel with the cookie dough.
Bake at 325 degrees for 28-30 minutes. Cookies will brown around edges of pan.
Cool, then invert onto cutting board, slice into squares.
Melt the canned cream cheese icing in the microwave about 30 seconds. Pour into plastic sandwich bag and snip off the tip of a corner. Drizzle icing over the cookie squares.
Makes about 25 squares.
