Strawberry Chicken Salad with Feta
I love salads, but I am kind of picky about them.
I like them to be full of stuff. I guess I just probably don’t love the taste of plain lettuce, or even plain spinach, but I want my salad to have textures.
I’m that way with crafting, so it make sense that I like texture in food too.
Something crisp, something crunchy, something acidic, something juicy.
That’s my kind of salad.
I created this sweet and smokey chicken salad with juicy strawberries, some briny feta, and crispy pecans to satisfy those texture cravings – Strawberry Chicken Salad with Feta.
Add a little more greens and chicken to make this a light summer dinner for two! I mean, look at those strawberries, they are already heart shaped, what a gorgeous meal to share with your honey!
I save a little calories by cutting my chicken breast in half horizontally – like I’m butterflying it but cut all the way through.
I heat my skillet up with a little Extra Virgin Olive Oil, then add some McCormick Smokehouse Maple Seasoning to both sides of the chicken, then let it cook through turning once during the cooking. It only takes a few minutes. I love the flavor of this spice, sweet, salty, smokey and delicious!
After it’s done, I take it and place the breast on a cutting board and slice it through.
Add your salad greens to your plate. I like a mixture of lettuce mix and spinach leaves.
Top your greens with your chicken, then slice some strawberries up and place around the chicken.
Sprinkle on some feta and chopped pecans.
Make your dressing. I used a simple vinaigrette.
3 tablespoons extra virgin olive oil
a pinch of sea salt
1 tablespoon vinegar ( use balsamic for intense flavor)
1 tablespoon spicy brown mustard
mix with a whisk and drizzle over top of your salad.
2 cups lettuce mix and spinach
1/2 chicken breast
2 Tablespoons McCormick Smokehouse Maple Seaspning
6 strawberries- sliced
2 Tablespoons chopped pecans
3 Tablespoons feta cheese
